Ingredients:

  • Small Baingan – 8-10
  • Oil – 2 tbp
  • Garlic-Ginger Paste – 1 tbsp
  • Tamrind Paste – 1 tbsp
  • Tomato Puree – 1 tbsp
  • Onion-Chili Paste – 1 tbsp
  • A Pinch Hing –
  • Sauf – 1 tbsp
  • Mustard Seed – 1/2 tbsp
  • Dry Mango Powder – 1/2 tbsp
  • Salt as per taste
  • Red Chili Powder – 1/4 tbsp
  • Black Pepper Powder – 1/2 tbsp-

Instructions:

  • Wash and slit the baingan.
  • In a microwave safe dish, add 1 tbsp oil and dry masala and microwave covered for 1 min. at 100% power, keep aside.
  • In another microwave safe bowl, add onion-chili, ginger-garlic and tomato, mix well.
  • Microwave covered for 2 min. at 100 % power.
  • Fill this masala into the slit baingan.
  • Apply a little oil over the baingan, microwave covered for 2 min. at 100 % power and turning between.
  • Add tamarind paste and mix well.
  • Microwave covered for 2 min. at 100 % power.
  • Serve hot achari baingan with paratha/roti/rice.
