Dalia / Broken Wheat / Cracked wheat / Bulgar / Lapsi
Broken wheat or cracked wheat is made by milling whole raw wheat grains coarsely. Wheat is cleaned and husked, then processed to the required size. When broken wheat is cooked, it has a nice aroma, delightful and grainy taste. It can be used as a savoury preparations like upma or namkeen dalia and broken wheat kheer or sweet lapsi with milk. It is often used to make soups and to stuff vegetables. It can also be used in pulaos, multi-grain breads and pancakes. It is also a good source of iron and magnesium. Broken wheat is more nutritious than rice, because it contains more fibre.
