Indian Rice Recipes
Rice is perhaps the most widely consumed grain in the entire world , especially in entire Asian region. The popularity of rice is because it is very easy to cook , tasty and also full of calorie.
Rice can be cooked in various ways. Some people like to eat pressure cooker cooked rice , others like it to cook in a rice boiler or rice cooker , while others like to cook it in an open vessel. Interestingly taste and quality of cooked rice is different if cooked in different ways.
In India rice is the main course except some part of North India , e.g. Harayana , Punjab, Delhi, some parts of Uttar Pradesh , where wheat is more predominant grain. Other than these few parts of India , rice is the main course in entire India , especially in entire South and East India.
India produces plenty of rice varieties depending on the region. Basmati rice variety is popular across entire India. But there are local rice varieties too such as Sona Masoori and Kolam are local popular rice varieties. To my knowledge there are atleast 1000 rice varieties in India. That shows how diverse country India is , if it comes to food. But note that this list is far from complete and it does not have name of any rice variety that comes from my region, central North India. And I am sure like this , the list does not have rice varieties lot many other Indian regions.
Similarly there are plenty of rice recipes across India , both vegetarian and non-vegetarian. It is cooked as a plain rice and eaten with any curry. Daal Chawal ( Rice ) , Curd rice or sambhar rice is almost every day meal in normal Indian household.

Just one note , all rice may not be good for health as it can be high starch. So if you do not want to consume high starch food , then you should carefully select the rice variety. If your rice is sticky after cooking then it contains high starch. Normally all the Basmati rice are sticky and have high starch. They taste and smell very good though. My personal favourite is Sona Masoori rice which I find very low in glycemic index and good in taste too. If you cook it in an open vessel and then rinse the water out of the cooked rice couple of times , then it becomes very light and very healthy for even a diabetic person.
