Arbi or Colocasia is produced in across entire India. It is very rich in starch and is used in every course of Indian meal, be it snacks, breakfast, Dry curry, Gravy curry, Indian Appetizer and many others. Since it is very high in starch and with very high glycemic index, it is not at all recommended for diabetic. They can be roasted, fried or boiled and sliced, grated or mashed. It can be eaten as a vegetable or combined with other veggies. They are rich in vitamins and minerals. It is very high in starch, and is a good source of dietary fiber.
